Bellagio to Showcase Wines of Williams Selyem Winery During Epicurean Epicenter Event Saturday, June 4


   
     
WHAT:  Take a trip through the Russian River Valley of California and experience the wines of Williams Selyem Winery while indulging in world-class, French-inspired cuisine at Bellagio’s latest Epicurean Epicenter event. Held in Tuscany Kitchen Saturday, June 4 at 7 p.m., guests will enjoy a four-course meal created by Le Cirque Executive Chef Gregory Pugin.

Complemented by a selection of Pinot Noirs and Chardonnays chosen specifically to enhance each dish, the intimate dinner begins with Langoustines au Caviar, Citrus Marinated New Zealand Langoustines, Osetra Caviar and Apple and Vodka Gelée.  The feast continues with Le Flétan d’ Alaska, a Potato Crusted Halibut, Celery Root and Mustard of Meaux Purée, followed by L’Agneau Du Colorado, an Espelette Crusted Lamb Chop, Taggiasche Olive Panisse, Piquillo Puree and Farcie of Spring Vegetables. After a selection of Les Fromages, the culinary journey ends with Pot De Crème Au Chocolat, Chocolate Pot de Crème, Cardamom Emulsion and Pop Rocks Marshmallow.

Williams Selyem has chosen six exclusive vintages from its Russian River Valley winery to complement the chef’s menu.  The featured wines include 2005 Blanc de Noir Brut Magnum, 2005 Hawk Hill Chardonnay, 2007 Westside Road Neighbors Pinot Noir, 2004 Rochioli Vineyard Pinot Noir, 2004 Hirsch Vineyard Pinot Noir, and a 1999 Allen Vineyard Pinot Noir.Williams Selyem Winery began in 1989 and less than two decades later has created a cult-status winery that has garnered international acclaim including the 1997 Winery of the Year award from the California State Fair.  Executive Winemaker Bob Cabral creates the wines at Williams Selyem with a deep passion for pinot noir and a strong belief that the key to making the best wine comes from respecting the vineyard and valuing the fruit.  His experience and patience has yielded wines that are true expressions of each vineyard site.
